Vegan Peanut Butter Cookies




Vegan Peanut Butter Cookies (Makes 8 cookies):



1/2 cup plus 1 tablespoons flour (70 grams) – lightly spooned, evenly swept


1/2 teaspoon baking soda (2.5 ml)


1/8 teaspoon salt (.6 ml)


1/4 cup lightly packed brown sugar (48 grams)


2 tablespoons vegetable oil (30 ml)


1 tablespoon light corn/glucose syrup or honey (15 ml)


1/4 teaspoon vanilla extract (1.25 ml)


1 tablespoons unsweetened apple sauce (15 ml)


1/4 cup natural style peanut butter (64 grams)Sparkly sugar or turbinado sugar for garnish (optional)


Preheat oven to 325 degrees F or 165 degrees C.
In a mixing bowl, stir together flour, baking soda and salt.
In a second bowl, mix brown sugar, vegetable oil, corn syrup (or honey), vanilla, apple sauce and natural peanut butter. Stir until smooth.
Add flour mixture to brown sugar mixture and stir until mixed. Form dough into 8 equal pieces and shape pieces into balls. Press down slightly to make neat mounds. Place the 8 mounds about 2 1/2 inches apart on an ungreased cookie sheet and sprinkle tops with sparkly sugar or use a fork and press a criss-cross pattern on top of each cookie. These don’t spread much, so if you don’t press the criss-cross, make sure you shape the cookies neatly.
Bake for 15 minutes. Let cool for 3 minute on sheet, then transfer to wire rack to cool.

Classic Peanut Butter Cookies


INGREDIENTS


* 1 cup unsalted butter

* 1 cup crunchy peanut butter

1 cup white sugar

* 1 cup packed brown sugar

* 2 eggs* 2 1/2 cups all-purpose flour

* 1 teaspoon baking powder

* 1/2 teaspoon salt

* 1 1/2 teaspoons baking soda


DIRECTIONS


1. Cream together butter, peanut butter and sugars. Beat in eggs.

2. In a separate bowl, sift together flour, baking powder, baking soda, and salt. Stir into batter. Put batter in refrigerator for 1 hour.

3. Roll into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a criss-cross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown. Do not over-bake.

Peanut Butter Cookies


Ingredients:


* 1 1/4 cups flour, sift or stir before measuring

* 1/2 teaspoon salt

* 1 teaspoon baking powder

* 1/2 cup shortening* 1/2 cup peanut butter

* 1/2 cup granulated sugar

* 1/2 cup light brown sugar, packed

* 1/2 teaspoon vanilla

* 1 egg


Preparation:


Sift together flour, salt, and baking powder; set aside. Cream shortening, peanut butter, and sugars; beat in vanilla and egg. Stir in flour mixture, blending well. Shape mixture into 3/4-inch balls; place on greased baking sheets. Flatten each cookie with the tines of a fork; dip fork in flour periodically to keep it from sticking to the peanut butter cookie dough.Bake peanut butter cookies at 375° for about 10 to 12 minutes. Crunchy Peanut Butter Cookies


Ingredients:


* 1/2 cup sugar

* 1/2 cup firmly packed light brown sugar

* 1/2 teaspoon salt

1/2 cup butter or margarine

1/2 cup crunchy peanut butter

* 1 egg

* 1/2 teaspoon vanilla extract

* 1 cup sifted all-purpose flour, sift before measuring

* 1/2 teaspoon baking soda


Preparation:


Directions for crunchy peanut butter cookies.Cream white and brown sugars, salt, butter and crunchy peanut butter thoroughly in large mixing bowl. Beat egg and vanilla into creamed mixture until light and fluffy. Into anothercontainer, sift together flour and soda. Blend flour mixture into creamed ingredients gradually.Form peanut butter cookie dough into 1-inch balls and place 2 inches apart on ungreased cookie sheets. With floured tines of fork make a criss-cross design to flatten cookies. Bake at400° 6-7 minutes or until lightly browned around edges. The ultimate peanut butter cookie


One thing that always reminds me of summer is peanut butter cookies. These are one of those dessert that are easy, and travel well. Not to mention, peanut butter cookies are a real crowd pleaser. Kids and adults love them. This is an easy recipe I developed today to take with me to our Fourth of July festivities tomorrow. Hope you like them as much as my husband, who could barely let them cool before diving in.


The ultimate peanut butter cookie
1/2 c. softened salted butter
1/2 c. firmly packed brown sugar
1/2 c. granulated sugar
3/4 c. smooth peanut butter
1 large egg
1 1/2 tsp. good vanilla extract
1 1/2 c. all purpose flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1 large pinch of cinnamon (optional)



With an electric mixer, blend the butter and sugars until creamed
Then mix in the peanut butter until combined
Next add the egg and the vanilla
Separately, sift the flour, baking soda and baking powder
With your mixer on low speed, add the dry ingredients to the wet ingredients in 3 batches, allowing the flour to be completely mixed before adding the rest. Do not over mix.
Drop 2 tbs of cookie dough on to an ungreased cookie sheet about 2 inches apart.
I find an ice cream scoop is the easiest and produces the most consistent cookies, but you can use spoons too.
Using a fork, press down lightly on the balls of dough one way, then the other, to form a cross hatch pattern.
Bake in a preheated 350 oven for 25-30 minutes or until cookies are brown around the edges

Directions:

Round dough into 1″ ballsand roll in powdered sugar. Place on un-greased baking sheets and bake at 350° for 8-10 minutes. Remove from oven and let cool slightly on cookie sheets. Remove and place on paper towels or a brown paper bag to cool completely. Store tightly covered.
